Brian Deloney, who’s served as the executive sous chef at the Capital Hotel for the last two years, plans to open a casual Southern cuisine restaurant early in 2009 in the space that previously housed Las Casitas del Valle, adjacent to the Faded Rose and Buffalo Grill on Rebsamen Park Road.

Prior to the Capital, the Little Rock native spent a decade working in Emeril Lagasse’s restaurant empire, first at Nola in New Orleans and then at the hugely popular Delmonico Steakhouse in Las Vegas.

He says he plans to get crawfish and soft shell crab when available and offer all sorts of daily specials. The restaurant, which doesn’t yet have a name, will be open for lunch and dinner daily.
