As a non-vegan, I have trouble contemplating a life without meat, eggs, butter and all the other delicious animal derivatives, but my friend Katie Douglas’ new Tumblr, The Lazy Vegan, makes a meatless world look pretty good, with recipes for dishes like Pan-Fried Polenta Cakes with Roasted Asparagus (above), Seitan Stir-Fry with Grilled Pineapple and Broccoli and Cinco de Mayo Pizza.

The gist is that she’s preparing simple, tasty vegan meals that even her toddler likes.
